Release 2.1.0

Bump version to 2.1.0 in plugin.php and readme.txt, and update the changelog with the changes since 2.0.0.

Following the release process in docs/releasing.md:

• Bump the Version field in the main plugin file's header.
• Bump WP_PLUGIN_CHECK_VERSION in the same file.
• Bump the Stable tag field in the readme.txt file.
• Update the changelog in readme.txt.
• Update the checks lists in docs/checks.md (already up to date in this branch).

After merging to trunk, create a new GitHub Release (tag 2.1.0) to trigger the deploy workflow.
