This beta adds a robustness guard for timeout/no-data update path.

Please stay on v2026.02.27 unless you want to test this beta.

Expected test feedback:

1. stove model
2. bridge type (esp-link / ESPHome / other)
3. init_command setting (true/false)
4. logs if any issue

Main intent:

• fix potential read misalignment after init_command
• prevent startup crash on unexpected fan_mode values
• prevent NoneType crash when polling returns no data
