ci: enhance build workflow and add new upload scripts

- Update `.github/workflows/build-native-upload.yml`:
  - Rename workflow to "Build Jar (Maven) & Upload (Actions + Release)"
  - Add triggers for `push`, `release`, and manual dispatch
  - Configure GraalVM JDK 25 with Maven cache
  - Build native image (skip tests), package binary into zip with checksum
  - Upload artifacts to Actions tab and Release page

- Add `.github/workflows/build-upload.yml` for additional upload workflow
- Add `diff.sh` helper script
