Fix COLMAP crash in headless Docker containers

COLMAP's binaries are Qt-linked and abort with SIGABRT when run in a container with no display:

qt.qpa.xcb: could not connect to display
This application failed to start because no Qt platform plugin could be initialized.
*** SIGABRT received ***

Fix: Set QT_QPA_PLATFORM=offscreen in the environment for all four COLMAP subprocess calls (feature_extractor, sequential_matcher/exhaustive_matcher, mapper, image_undistorter). This tells Qt to use the offscreen renderer instead of trying to connect to X11.
