GIN Index v1.1.1 release.

This release continues the library-first module surface and the current adopter guidance. The optional SIMD parser requires an opt-in build tag and a native dependency; see https://github.com/amikos-tech/ami-gin/blob/v1.1.1/docs/simd-deployment.md for loading and ownership guidance. See README for installation, examples, and known limitations.
