Add version extraction for ModuleManagement project

This update to `publish-nuget.yml` adds a command to extract version information from the `SharedTools.ModuleManagement/SharedTools.ModuleManagement.csproj` file. This ensures that the version is now retrieved from this project, which was previously excluded from the version extraction process. Other version extraction commands remain unchanged.
