[C++] flight compilation problem caused by abseil

issuse: [Bug]: CMake build failing on MacOS Ventura 13.3.1 / Xcode 14.3

Since the latest grpc relies on the abseil-cpp library, and our flight will rely on grpc, the abseil-cpp compilation problem will fail.

It seems that this is a Abseil problem.
What can we do in Apache Arrow side?
Can we close this?

Arrow is using a very old abseil that needs to be updated, see #36969
