[Feature Request]: Support DateTimeOffset as timestamp

What would you like to happen?

Currently if a source data (using MSSQL db) has an element of DateTimeOffset, the metadata is read as a string. It would be nice to recognize that format as timestamp with timezone, especially with a use-case of converting data from one db platform to another.
