Support Java 25

Hello Iceberg maintainers,

We are planning to use Java 25 together with Apache Spark 4.2 and Apache Iceberg.
We are currently on latest iceberg release(1.11.0) .

We noticed that the Apache Spark community is actively tracking Java 25 support:

Is the Iceberg community planning to officially support Java 25? If not, would you consider tracking it as an enhancement for a future release?
