Switch to PyJWT and update OIDC validator

Replace python-jose with pyjwt and adapt the OIDC token validator to the PyJWT API. Changes include: update pyproject dependencies and bump package version; switch imports to jwt and jwt.types, raise PyJWT-specific error when no matching kid is found; use jwt.types.Options for decode options and pass audience/issuer/leeway explicitly; allow audience to be str or list[str] and add a strict_aud flag; add a computed cached required_claims field; add JWKS fetch caching and docstrings; adjust several pydantic fields and rename/refactor verification flags; minor formatting cleanup in validated_token.py; update tests to accept audience as either string or list.
