Users who are using one particular debug log mode usually know what the channels mean, so having the names for all of them is nice to have, but not need to have, and I would not worry about not having all of them.

This adds the DEBUG modes and field names for Betaflight 4.1.
This does NOT add the scales and units to the Graph, there are a lot of them and I'm not sure of all values.
