Major neovim config updates

• Near complete rewrite - should be much better organized now
• Lean into https://github.com/folke/lazy.nvim plugin file structure
• Improved colorscheme organization
• As much plugin lazy loading as I could comprehend
• Replace none-ls with lsp formatters/linters where applicable (gopls, eslint-lsp) and guard.nvim for the rest
• "VOLAR FUCKING WORKS NOW!!!" and other fixes along with an lsp config rewrite (Thanks @VonHeikemen for both the lsp docs and the volar guide)
