Cut the release for the endpoint-coverage work merged in #199, which landed with the version and CHANGELOG deliberately deferred to release time (per the CHANGELOG's git-cliff workflow note). Bumps pyproject to 0.8.0, adds the [0.8.0] CHANGELOG section, and regenerates the README compatibility sentinel to match. Wire format is unchanged (still 2), so REQUIRED_WIRE and MIN_ENGINE_HINT stay put.
