exchange api was reorganized to new (V3) version:

as you see, we have v1 implemented and they were shut down in these last days: https://github.com/ccxt/ccxt/actions/runs/23432163773/job/68161674283?pr=28219#step:10:171
so, this might need to be a "new exchange" implementation from the ground, including a big list of private methods, so we don't have it in top priorities atm, so we should delist it (as exchange is totally unfunctional now, v1 endpoints doesn't make any sense)
