v0.2: File Sorting

This major update refactors the entire project and adds a state management system, transforming it from a simple script into a robust CLI application.

🚀 New Features

• History Logging (Manifest): The application now records all sorting actions (tracking original_path -> new_path) into a persistent manifest.json file (saved in the user's hidden .filesorter directory). This lays the foundation for future "Undo" features.
• Sort Method Argument: The tool now accepts a third command-line argument to specify the SORT_METHOD (e.g., BY_EXTENSION), making the SortEngine more flexible.

📦 Build & Compatibility

• Targets Java 17 (LTS): The project's build version has been lowered from Java 23 to Java 17 (LTS) to ensure compatibility with a much wider audience.
• Fat Jar (Gson Included): The .jar file is now built as a "Fat Jar," which means the Gson (JSON) library is included inside. Users only need the single .jar file and Java 17 to run the program.
