refactor: replace axios with native fetch + undici (#66)

* refactor: replace axios with native fetch + undici

Remove axios dependency (supply chain risk per #64) and replace with
Node.js native fetch. Use undici Agent for self-signed certificate
support when connecting to the local IB Gateway.
