chore(fess): bump Fess to 15.6.1 and consolidate Ollama compose (#55)

- Bump Fess image references from 15.6.0 to 15.6.1 across Dockerfiles
  (15.6, 15.6-noble, 15.6-al2023), compose files, multi-instance
  configs, vanilla setup, and the Playwright build
- Bump fess-llm-gemini and fess-llm-openai plugins to 15.6.1
- Merge compose-ollama-gpu.yaml into compose-ollama.yaml so the default
  Ollama overlay ships with NVIDIA GPU support and the
  fess-llm-ollama:15.6.0 plugin
- Update compose/README.md to reflect the consolidated Ollama overlay
