Why bumped to 3.0.0?

The bump skips 1.0 and 2.0 to fix the listing issue caused by the old deprecated MCP implementation from npm. The last version was 2.x, causing modelcontextprotocol registry to show it as the latest Opik MCP version. So this bump essentially widens the versioning scope from the MCP Python package to Opik MCP as a tool in general.
