docs: Update to match latest v1 default and cover erofs_formats better#355

Commit 080f925 ("erofs: Switch default format version from V2 to V1") flipped cfsctl's default EROFS format but left several doc comments describing the old default. Also ensure we have good doc coverage for the `erofs_formats` metadata. Signed-off-by: Colin Walters <walters@verbum.org>
