It is produced by GitHub Actions from the tagged commit and the build
log is public, but it carries no Apple Developer ID. Gatekeeper will
refuse to open it until you clear the quarantine flag:

xattr -dr com.apple.quarantine /Applications/SentryBar.app

Signing and notarisation require a paid Apple Developer account.
Until this project has one, that step is honestly missing rather
than quietly worked around.

What SentryBar does and does not do

SentryBar watches and warns. It reads the socket table with
lsof and nettop; it installs no system extension and never sits
in the path of your traffic. It therefore cannot block a
connection. If you want blocking, use a firewall such as LuLu —
the two compose well.
