Symfony 6.3 and 7.0 are EOL. Lifts all
symfony/*constraints from^6.3 || ^7.0(and variants) to^6.4 || ^7.3, matching Pimcore 12.3's minimum requirement.Should reduce
--prefer-lowestCI noise from ancient Symfony versions pre-dating PHP 8.4.
