#429 -> this PR made it so that default_model returns
noneunless pinned by --model xxx. however, the problem now is that the appserver (used for smart routing) won't work without a starting model.this PR updates the app server to launch using a selected model from the model catalog OR with fall back of gpt-5.6-sol.
