Adding p2p_oci_registry_plugin to k8s response.

Looks good overall.
One gap: p2p_oci_registry_plugin shows up on create/update, but not on Retrieve an Existing Kubernetes Cluster or List All Kubernetes Clusters

Those endpoints use cluster_read.yml, which wasn’t updated in this PR. Could you add the same ref there?
