On picasso, print only category labels which are used. Currently, all categories of a camp are displayed in the picasso print, even if they are not used in the selected period or with the current filters. This clutters the printout with unnecessary information. This change modifies the Picasso print functionality to only display categories that have at least one activity in the selected period and matching the active filters.

This was never set before and i assume the whitelist feature was deactivated. This got lost when renaming GRAFANA_HOST to GRAFANA_PROXY_HOST.
v8 has a regression where it always deploys redis, even when it's disabled. Issue: oauth2-proxy/manifests#350
