Rename product from Doc Maker to Contractor everywhere

- All UI text, onboarding wizard, footer, settings About section
- Installer: Contractor-Setup.exe, shortcuts say Contractor
- README, install.bat, install.sh
- Updater version bumped to 1.2.0
- CI workflow updated for new installer filename
