What this PR does / why we need it:
This PR adds LY Corporation to the Envoy Gateway adopters list. We uses Envoy Gateway to manage ingress traffic for their internal AI inference traffic with Envoy AI Gateway.
I'll also open a PR on the Envoy AI Gateway side.ref: envoyproxy/ai-gateway#1730
