v0.4.1: multi-wheel + Service Mode + watch buttons

First release on the multi-wheel branch. Big shape.

Wheel support (Preview, untested on real hardware)

• KingSong, Veteran, Begode/Gotway, Ninebot, older InMotion (V1/V3/V5/V8/V9)
• Verified families unchanged: InMotion V14 / V12 / P6

P6 protocol

• Motor / MOS / IMU temp parsed from realtime stream
• Trip / odometer fields no longer swapped
• Lock + light cooldowns to suppress stale frames

Service Mode

• Per-family Commands, Inspect (live byte grid + tap-to-log + range filter), Raw (presets + 6 wrap modes), Attach picker for log context
• Forced light theme + matrix log so the mode reads as obviously different

Watch (Wear OS)

• On-screen buttons now configurable (tap + long-press actions, optional haptic, toast on hold)
• Watch sends Build info to phone on launch for the Service Mode log
• VIBRATE permission added (fixes crash on tap)

Phone polish

• 14 locales + new Italian / Polish / Ukrainian / Brazilian Portuguese / Dutch / Latin American Spanish; first launch detects phone locale
• Dashboard temp colour tiers tuned for EUC motors
• Stat cards now show "—" when no data, instead of misleading 0
• "Backup settings & trips" rename, Service Mode docs page, Norwegian voice fix, square Service Mode UI, ... lots of small fixes
