Replace mockup screenshots with live captures of the actual theme

Forum index and discussion screenshots are now captured headlessly
against the installed extension running on a real Flarum 2 forum
(palette picker visible in header, hero widgets rendered, glassmorphic
discussion cards). admin-settings.png intentionally left as-is for now
— it requires authenticated capture.
