Feature description
VA-Spec 1.0.0 release was made: https://github.com/ga4gh/va-spec/releases/tag/1.0.0. We should update our Pydantic models to align with this release
Use case
I would like to be able to use the 1.0.0 models in our projects (CIViCPy, MetaKB, etc.)

I need to check to see if Cat-VRS Python also needs to be updated. I first noticed I had to update VA-Spec because pmid type changed from integer to string
