For the reference: it (and some other keys) were changed in godotengine/godot#73422 to avoid conflicts with special character input and other key combinations.

Change B key to Q key. Tried Ctrl + Option + Cmd + B in 4.1.2 and editor did not quit to project list, but did when using Q.
