Any way we can help prevent this sort of thing happening?

There is a more recent version of that erlang major.minor.patch version 27.3.4.2, if a newer version comes out while we are building we might skip the older version in favor of the new one.

Same when it comes to OS versions. If a new debian bookworm tag is released we will skip the older ones and start building the new one. If that happens while we are building there may be tags with only one architecture. If that happens look for newer versions.
