Bump version to 12.1.0-02
Match the TOC filename to the SimCOverride casing
Git kept the old lowercase name through the rename because Windows is
case-insensitive, so the release workflow's version check found no TOC
on the Linux runner and every tag would have failed.
Rename to SimCOverride and add screenshots to the README
Capital C throughout: addon name, saved variables, frame and panel
names, the export banner and the packaged folder. Reword the TOC notes
so the store listing leads with what it does.
Add the panel, spec dropdown and build dropdown screenshots to the
README, and tidy DEVELOPERS.md to ATX headings.
