Upload with "Unknown Date" workflow

The feature

First off, love Immich. I'm not a dev (more data science), but I am bilingual so I'm helping over on Weblate as much as I can.

The Context: My wife and I have a few thousand of digital photos from our childhood (and I have several thousand more from previous generations). They were all digitized on a few specific days. If they were uploaded to Immich in their current state we'd have thousands of photos spanning decades assigned to a short period in the timeline.

The idea: A setting that is toggled during upload titled "Date TBD" or something similar. Immich would then do the following upon upload

1. Ignore all logic to determine the timeline date upon upload and place the photos in a separate directory.
2. Place the photos in a special queue where users can view each photo and specify a date.
3. When a date is established, the photo/video is moved to the appropriate folder and integrated into the timeline. with the established date.
4. Optional: The exif DateTimeOriginal field would be updated.

Current Workarounds: I'm a bit new to Immich, but from what I can tell there isn't a great way to deal with a large number of assets with unknown dates. Using ExifTool prior to upload gets the job done, but that's asking a lot of my wife who isn't tech savvy and at a scale of thousands, being able to take out her phone wherever she is and knock out 10-15 photos when she has a spare 5 mins is the difference between completion and failure.
