Fix Windows Installation

Crystal has finished Windows support since 2023 but this still hasn't been reflected in the docs. Maybe update docs to add Windows installation instructions?

Feel free to make a PR to add installation instructions for Windows for the Community Installation Guide section of the docs. I don't think we are going to officially support Windows installations and provide special support for it.
