• Fix container crash on startup when bind-mounted `/data` and `/config` are owned by root (regression from 1.5.0 non-root user change)

The entrypoint now starts as root, chowns the mounted volumes to `appuser`, then drops privileges via `gosu`. Upgrades from any prior version require no manual intervention.
