Paper S3: Implement grayscale sleep screen with FastEPD 4BPP

- Add LSB/MSB grayscale buffer storage in EInkDisplay for Paper S3
- Implement displayGrayBuffer to convert 2-bit grayscale to FastEPD 4BPP
- Store grayscale buffers in PSRAM via copyGrayscaleBuffers functions
- Use FastEPD's native 4BPP mode with default M5 grayscale matrix
- Gray levels: black=0, dark gray=2, light gray=11, white=15
- Book cover grayscale quality needs further tuning (TODO)
