Bump version to 0.1.1 for PyPI release#9

The 0.1.0 release failed to publish: PyPI rejected the upload with "400 File already exists" because 0.1.0 was already on the index and PyPI forbids re-uploading an existing version. Bump to 0.1.1 across the three in-sync locations (pyproject.toml, breadcrumbs/__init__.py, breadcrumbs/cli.py _FALLBACK_VERSION) so the next release ships a new version.
