v1.1.0: Evaluation pipeline and extraction prompt

Adds the evaluation pipeline and makes the extraction prompt available as a tracked module.

• Evaluation of extracted name components against EDH (Epigraphic Database Heidelberg) prosopography, and of social status labels
• GitHub Pages viewers for inspecting evaluation results
• pipeline/prompt_template.py: the extraction prompt, previously untracked, so that extract_career_graph.py can be run as published
