Updated documentation to reflect that the cartesia plugin now supports STT
(speech recognition) in addition to TTS (voice synthesis). The main README
was updated in the original commit, but CLAUDE.md and the plugin-specific
README were not.
Without this fix, agents or developers using CLAUDE.md as a reference would
not know that cartesia can be used for STT, potentially leading them to
choose a different provider unnecessarily.
