Unstract MCP Integration for Document Processing

Added support for Unstract - an LLM-powered platform for extracting structured data from unstructured documents (PDFs, images, DOCX, etc.).

Features:

• Self-hosted by default - One-command install via unstract-helper.sh install
• Reuse existing LLM keys - Your OpenAI, Anthropic, Google, Azure keys work as Unstract adapters
• Ollama support - Fully offline operation with local LLMs
• On-demand MCP loading - Disabled globally, loads only when document processing is needed
• Analytics disabled - REACT_APP_ENABLE_POSTHOG=false set automatically
