Enable building examples on Windows in GitHub workflow #88
Description
Building examples on Windows on GitHub workflow has been failing due to a MATLAB license issue. The failure may be a result of using mcc during install stage. We should confirm this is indeed the reason and if so consider moving it to the build stage.
