[Simulink online doc update]

Summary

The documentation in the readme here states that simulink online is not supported via matlab-proxy. However, as of R2024b at least, the Simulink GUI seem to load and render just fine using the matlab proxy.

If there are still limitations to this tool to know of, they should be updated here and more clearly stated

The doc has been updated to represent the known limitations and requirements to support Simulink Online.
