docs: document the curl|sh installer in the README#3

Now that v0.1.0 ships prebuilt binaries, restructure the README install section into per-method subsections (install script, binary, from source, repo setup) and lead with the one-step installer. Fix the install.sh URL in docs/install.md to the raw path (the script is not a release asset) and refresh the stale README cross-reference.
