Refactor `lineBreakStrategyIOS` -> `lineBreakStrategy`

This should work wholesale on macOS. Order of operations would be:

1. add a new prop lineBreakStrategy
2. deprecate lineBreakStrategyiOS, but keep it around. Make it use the lineBreakStrategy under the hoods
3. in a couple of versions, we will remove lineBreakStrategyIOS
