chore(release): Standardize build command in workflow

Update the release workflow to use the unified 'make build' target
for all Linux architectures (amd64, arm64, armv7).

Previously, the workflow executed architecture-specific build
commands like 'make xbuild/linux/amd64'. This has been changed to
run the generic 'make build' target.

Since 'make build' produces a single output file named 'readeck'
in the 'dist' directory, a subsequent step has been added for each
architecture to rename the artifact. This ensures that the built
executables are correctly named with their platform and architecture
suffixes (e.g., dist/readeck-linux-amd64) before being published
as release assets.

This change promotes consistency in the build process within the
workflow by leveraging a single make target.

Removed the `OUTNAME` environment variable definition
from the `release` job's environment block in
`.github/workflows/release.yaml`.
