Documentation changes

This PR reworks our information architecture to advance multiple goals.

• Reduce sprawl: sidebar is getting full and messy
• Make it easier to accept automations: adds the help-center dir so that hidden stub pages can start to populate context for the assistant without bloating the main content
  • Concepts and Glossary pages also give automations landing spots for conceptual info without growing other pages
• JTBD IA: group concepts people need
• Foundation for adding help center page: can use the assistant page for a help center tab to give people a chat-first docs experience
