release: prepare FunClip v2.1.0

Summary

• establish FunClip 2.1.0 as the first versioned GitHub release, following the README-documented v2.0.0 feature line
• publish reproducible tar.gz and zip application snapshots plus SHA256SUMS; no wheel is claimed because FunClip is not packaged as a Python distribution
• add a retry-safe tag workflow that builds from a commit, recovers drafts, verifies remote asset names/sizes/digests, and treats a matching published release as an immutable no-op
