Add Project Poseidon as a Plugin platform

Hello, a while back a few different platforms were added to the platforms section for plugins of note mainly was Babric. I believe it would be a nice addition to get Project Poseidon added to the platform section as it is thee defacto server platform for the Beta 1.7.3 community outside of Uberbukkit a fork of Project Poseidon.

This would be a nice addition as a Project Poseidon plugin dev to have other than just listing my plugins as "bukkit" with the b1.7.3 tag; as I have gotten DM's a few times from modrinth users that my plugins didn't work for them or they had issues on old CraftBukkit as the 2011 jar doesn't have the same API that Project Poseidon has that others and I use.

I believe it would be good to have Project Poseidon as a platform for the niche Beta 1.7.3 / Legacy community.
