switch elasticsearch to use official docker image

As title. Hash from https://hub.docker.com/layers/library/elasticsearch/8.19.13/images/sha256-ad40f681ac936710a0afd8875d4a575666848b0e91a864a468aed76b55cda8c5

Context

We need auth for requests, and switching to docker hub for our elasticsearch images, where we now have auth set up, is easier than getting an auth token from elasticsearch themselves.
