v1.2.1: PDF zu Text — export all page text as .txt

Rebuilt locally from a cloud session whose branch could not be pushed (403).
Tool in the Konvertieren group; lines are reassembled from pdf.js text items
via y position and hasEOL. Web shim serves .txt as text/plain. E2E test added.
